Chia seeds

I came to know of Chia Seeds when my two young adult children started (or tried to) eat healthy.

Amazingly enough that their very selective diet included superfood like chia seeds, quinoa, brown rice, berries and going on ‘no carbs’, I often come across leftover buckets of KFC in the fridge.  Their day would start with fresh fruit or vegetable smoothies, with sachets of health food, protein, chia seeds and then snack (my guess) on KFC at night.

Good old KFC, indeed you are ‘finger licking good’.

I started making chia seeds smoothies each morning too and drank them before those chia seeds had time to expand.  Chia Seeds have numerous benefits, but one of the most unique properties of Chia is its ability absorb up to 12 times its weight in water.

My favorite way of eating chia seeds now is making quick and easy delicious Mango Chia Seed Pudding.

All you need to do is to add a ratio of 1/3 of chia seeds to liquid.

Here’s my simple recipe.

Ingredients
Almond Milk (or any milk)
Mango Puree
Chia Seeds

Mix all together.  You can make any amount you wish as long as the ratio is 1/3 chia seeds to liquid.  Leave in fridge for at least 3 hours to soak.  The result is magical.
