Sambal curry okra with prawns

Okra, also known as ladies fingers’ is a vegetable valued for its edible green seed pods.  Its texture varies dramatically depending on how it is cooked.  If you do not mind the slim, you could stir fry this veggie.  Otherwise, to get rid of the slim, boil the okra first in boiling water with a pinch of salt for about 5-10 minutes before using it for the recipe.

Okra is fat free, has a good source of fibre and is believed to combat diabetics.

  • Okra is an excellent source of vitamins C and K (important for helping your blood to clot).
  • It is also a good source of thiamine (vitamin B1), folate (vitamin B9) and vitamin B6.
  • Okra contains dietary fibre, which is important for a healthy bowel.
  • It also contains minerals such as potassium (which helps to regulate blood pressure), calcium and magnesium.
  • Energy – 100 g of okra supplies 85 kJ.

Today’s recipe is Sambal curry okra.  It is a very simple dish, very appetizing to eat with rice even as a one dish meal.  You can either use store bought sambal paste or create your own.  I have earlier shared a sambal recipe here.

200gms okra (washed & cut the ends away)
50gms prawn meat (without shells)
1 teaspoon curry powder
2 teaspoon sambal paste
a pinch of salt & sugar (optional)
2 cloves garlic – chopped into small pieces
1/3 cup water (or 75 ml approx.)
2 tablespoon of cooking oil

1. Boil water in a pot. Once boiled, add okra and cover for 5 minutes.
2. Discard water and put okra aside.
3. In a wok, add 2 tablespoon of cooking oil.
4. Add garlic, sambal paste and curry powder and stir till fragrant.
5. Add the prawns stir for a few minutes.
6. Add the boiled okra and still till mixed.
7. Add approximately 75 mil of water and cover wok till boiled.
8. Scope into a dish and enjoy with a bowl of rice.

Preparation time: 10 minutes
Cooking time: 10 minutes

This is an appetising, quick and easy recipe.
